{Reception}
Roasted poblano chile….stuffed with shrimp, chorizo, blended baby Swiss, chevre goat cheese, and cheddar with fresh cilantro, served over creamy sundried tomato sauce with fresh pico de gallo.
Gruet Brut Champagne
Offers a crisp, and full-bodied sparkling wine, which has developed rich complexity and fine mousse.  The allure of toasty finish from twenty-four months on triage, is a complement to the sophisticated apple and citrus flavor.   New Mexico

 

{Second Course}
Black  bean puree garnished with roasted red pepper, grilled andouille sausage and fresh scallion sour cream.
Ruffino il Ducale
The oak aging adds complexity and length to the aromas with delicious hints of walnuts, tobacco and cassis.  It is medium bodied, with mellow tannins and has a lovely balance of ripe fruit and acidity.  Flavors are intense and lingering, characterized by hints of blueberries, raspberries and cocoa.   Tuscany, Italy

 

{Third Course}
Iceberg wedge with skewered grape tomato, Italian prosciutto ham and shitake mushroom.  Served with buttermilk and Parmesan dressing.
Cline Pinot Gris
Refreshing and approachable, this Pinot Gris has exquisite flavors of pears blended with the Chardonnay’s delicate apple and peach notes.  Bright acidity and fresh fruit are enhanced by not using oak in the winemaking process.   Sonoma County, California

 

{Intermezzo}
Cherry sorbet made with local High Rolls, New Mexico cherries.

 

{Entrée}
Choice of 12 ounce Badlands Ribeye steak, or 8 ounce Ahi tuna steak. Pressed with garlic, peppercorns, and red chile rub.  Served with buttermilk onion rings, roasted red potatoes, sautéed fresh green beans and baby carrots. Finished with jalapeño demi-glace.
Greg Norman Cabernet Merlot
This blend of Cabernet Sauvignon (88%) and Merlot (12%) is a supple generously flavored blend, which is always the perfect partner with food. Vibrant and complex aromas of spicy, red berry fruit, cinnamon and clove spice.  The same abundant, vibrant fruit is reflected on the palate which also shows a hint of licorice, sweet cinnamon spice, and subtle cedar characters from the French oak.  The wine is beautifully structured with soft, velvety tannins, balanced acid and abundant, bright sweet fruit on the finish.   Limestone Coast, Australia
